1. Blueberry overnight oats

Ingredients:
– 1/2 cup of rolled oats (gluten free oats can be used if necessary)
– 2/3 – 3/4 cup of Dutch Lady Milk
– 2 teaspoons of chia seeds
– 1/4 teaspoon of vanilla extract
– 1 tablespoon of almond butter
– 1-2 teaspoons of maple syrup, honey, or low-carb liquid sweetener
– 1/4 cup of fresh blueberries, plus more for toppings
Instructions:
1. Add oats, milk, chia seeds, vanilla, and blueberries together in a jar, resealable container or a bowl.
2. Shake the jar or combine with a spoon. Seal and chill in fridge for at least four hours or overnight.

2. Cottage cheese omelette

Ingredients:
– 2 large eggs
– 1 tablespoon of Dutch Lady Milk
– 1/8 teaspoon of kosher salt
– A pinch of freshly ground black pepper
– 1/2 tablespoon of unsalted butter
– 1 cup baby spinach (about 1 ounce)
– 3 tablespoons of cottage cheese
Instructions:
1. Whisk the eggs, milk, salt, and pepper in a medium bowl and whisk until it is completely mixed and the eggs are a bit frothy.
2. In an 8-inch frying pan, melt the butter. Make sure the butter coats the pan evenly. Add the spinach and cook for 30 seconds or until wilted. Put in the eggs and make sure it coats the pan.
3. With a spatula, push the cooked eggs towards the center, to allow the uncoooked eggs to cook. Make sure the edges are set and the center is wet.
4. Once it is done, remove the pan from the fire. Spread the cottage cheese over the eggs. Use a spatula to gently fold the egg over the filling. Slide the omelette onto a plate.

3. Fluffy breakfast pancakes

Ingredients:
– 1/2 teaspoon of salt
– 1 egg
– 1 cup of Dutch Lady Milk
– 1 cup of all-purpose flour
– 1 tablespoon of vegetable oil
– 2 tablespoons of sugar
– 2 teaspoons of baking powder
– 2 tablespoons of unsalted butter
1. In a bowl, mix together the dry ingredients (flour, salt, sugar, and baking powder).
2. In a separate bowl, whisk the egg, butter, and Dutch Lady Milk.
3. Combine the flour mixture and wet mixture, and mix well.
4. Place a lightly oiled pan or skillet over medium heat.
5. Pour 2 to 3 tablespoons of pancake batter into the pan to make one pancake.
6. Once the pancake’s surface is covered in bubbles, flip it over and cook until both sides are golden brown.
7. Serve with maple syrup, butter, jam or any desired topping.

4. Chia seed pudding

Ingredients:
– 2 tablespoons of chia seeds
– 1/2 cup of Dutch Lady Milk
– 1 teaspoon of honey or other sweetener (optional)
– Strawberries or other fruits for topping
Instructions:
1. Mix the ingredients in a jar. Leave it for about 2-3 minutes then mix again until there are no more clumps.
2. Let the jar sit in the fridge overnight, or for at least two hours.
3. When it’s time to eat for breakfast, top it with your favorite fruit and enjoy cold!

5. Granola breakfast bowl

Ingredients:
– 2 cups of rolled oats
– 1/4 cup of vegetable oil
– 1/2 cup of maple syrup
– 1/4 cup of desiccated coconut
– 1/4 cup of sliced almonds
– 1/2 cup of Dutch Lady Milk
– 1/4 cup of Greek yogurt
– 1 apple, thinly sliced
– 1 tablespoon of bee pollen (optional)
Instructions:
1. Pre-heat the oven to 190° C. Mix all the granola ingredients in a bowl, and lay it on a baking tray.
2. Let the granola bake for 10 minutes. Remove the granola from the oven and toss it, and let it continue to bake for an additional 10 minutes.
3. Pour warm milk over the granola. Add the yogurt on top and garnish with the apple and bee pollen.

6. Strawberry cheesecake french toast

Ingredients:
Egg wash
– 4 eggs
– 1 cup of Dutch Lady Milk
– 1 tablespoon of vanilla extract
– 1 tablespoon of cinnamon powder
Filling
– 115g of cream cheese, warmed
– 2 tablespoons of vanilla extract
– 2 tablespoons of lemon juice
– 3/4 cup of heavy cream
– 1 and a half cups of diced strawberries
– 1/3 cup sugar
Topping
– Icing sugar
– Maple syrup or honey
Instructions:
1. Whisk eggs, cinnamon, vanilla, and milk together in medium-large bowl to make the egg wash.
2. In a medium bowl, combine the cream cheese, vanilla, sugar, lemon juice, and heavy cream to make cheesecake mixture.
3. Cut two slices of bread into heart shapes, and spread the cheesecake mixture on one side for each slice.
4. Place sliced strawberries on both sides, and combine both slices to form a sandwich.
5. Coat the sandwich in the egg wash.
6. Melt butter in a skillet on medium-low heat and cook for 2-3 minutes or until crumbs are crispy and the bread is golden brown.
7. Stack and garnish with strawberries and icing sugar. Top with maple syrup or honey, to your liking.
