‘Tis the season to kick off festivities with a delicious breakfast treat.
This is a super simple recipe that will instantly take you to a crisp morning in the snow or those German Christmas markets which are so often laced with a wonderful air of cinnamon-like goodness. Perfect for a pre-Christmas brunch with friends.

Flavours and pairings:
Gloriously fragrant, with buttery fresh coconut and gentle notes of cinnamon and all spice to warm the heart. Best served with a bowl of fresh berries and yoghurt, or with a dash of cold milk.
Ingredients:
- 2 cups rolled oats
- ½ teaspoon cinnamon
- ½ teaspoon all spice
- ¼ teaspoon salt
- 3-4 tablespoons honey
- 2 tablespoons coconut oil (or a neutral oil like canola)
- 2 tablespoons walnuts, roughly chopped
- 2 tablespoons dried cranberries, roughly chopped
- 2 tablespoons freshly grated coconut (or desiccated coconut)
Method:
- Preheat the oven to 150°C.
- Line a baking tray with baking paper and set aside.
- Combine honey, coconut oil, salt, all spice and cinnamon in a large bowl, then mix everything together. Add the rolled oats and walnuts, and mix until the oats are evenly coated.
- Pour the mixture onto a lined baking tray, then spread evenly across the tray – this helps it to crisp up evenly. Place in the oven to bake for 10 minutes.
- Remove from the oven and give everything a good mix before returning to the oven for another 10 minutes to bake until golden and crisp. Then, remove from the oven again.
- Add chopped cranberries and stir through while the granola is still hot. Set aside and allow to cool for 10 minutes.
- Finally, top with a sprinkling of freshly-grated coconut and it’s ready to serve with a little yoghurt or as a fruit bowl topping.
